Trey’s Brie Pastry

 I am back from Mobile! Here is a quick weekend recap and recipe!

When I arrived in Mobile Trey had Mellow Mushroom waiting on me for dinner. We had a Caesar salad, bruschetta and a Mediterranean pizza. For dessert he got a slice of German chocolate pie and a red velvet cupcake from Fresh Market. Everything was wonderful. I didn’t even think about taking pictures.

Friday we got up and went to Fresh Market and bought sushi, salad and the stuff to make his Brie Pastry. If you haven’t notice already I love Fresh Market. Anytime I am in Mobile we go at least once if not more during my stay.

When Trey and I were in the pre-dating phase (not sure what to call the time when you aren’t sure what you are but you know you like each other kind of thing) he made this pastry appetizer. I was completely impressed. It taste so good! His cooking is one of the many reasons why I date him.

If you need something quick but impressive to make for an appetizer try this.

Trey’s Brie Pastry
Makes enough for 4-6

Ingredients:
  • 1 sheet of puff pastry, thawed
  • 8 oz round Brie block
  • 1 cup sliced almonds
  • 1 cup craisins (we used a berry mix)
  • water crackers
  • grapes
  • cooking spray
  • foil
Instructions:
  1. Preheat oven to 350 degrees
  2. Cover baking dish with foil. Spray with cooking spray. Set aside.
  3. Spread out pastry sheet on counter (make sure counter is clean!)
  4. Cut brie in half like a hamburger bun.
  5. Place one half of the brie in the center of the pastry.
  6. Cover the cheese with the almonds then add the craisins. Top with the other half of the Brie.
  7. Take corners of pastry and fold on top of the Brie. Make sure the pastry completely seals over the cheese. You do not want any holes
  8. Place in baking dish folded corners side down.
  9. Bake for approximately 1 hour. Until pastry is golden brown you know its good when the cheese starts bubbling out the bottom.
  10. Serve on crackers with grapes.

Today after work I went to Walmart and bought every type of cleaning item I will ever need! Or at least I hope so. I also got some odds and ends.

I’m Moving!

So I have been approved and I am moving in next Wednesday. Guess what else happens on Wednesday? I turn 24!

Chuck’s Fish

After a great day at work, I went with a couple of friends to dinner. Tonight was Ladies’ Night at Chuck’s Fish. Like always everything was really good.

I got the California Roll add cream cheese. I use to hate cream cheese but once I tried it I love it in all of my sushi rolls.

Well I am off to enjoy some tv and catch up on some reading.

Curry Feta Turkey Burgers


When I arrived home from work today this was waiting on me!!!

It’s completely official now!

For dinner I decided to make an old favorite. Curry Feta Turkey Burgers!

Curry Feta Turkey Burgers
Adapted from a sorority sister. Not sure where she got it from.

Makes enough for 5

Ingredients:
  • 4 ground turkey burger patties
  • 4 oz feta
  • 5 buns
  • 1/2 cup light mayo
  • curry (to taste)
  • parsley
  • chopped onion (to taste)
  • garlic powder (to taste)

Instructions:
  1. In a small bowl, mix mayo and curry together. I used about 2 tbs but you can choose how much to taste.
  2. In a medium bowl, mix turkey, feta, about 1 tbs parlsey, chopped onion, garlic powder. After completely mixed add one heaping tbs of curry mayo. Mix well.
  3. Make out into large patties. They will shrink a lot after cooked.
  4. Broil on 450 degrees until turned a brownish color about 8-10 mins. Flip over let cook until done about 5-6 mins.
  5. Use some of the remaining curry mayo on the bun.

Flashback: Lima, Peru Part 2


June 25, 2007

Today we met at 9:30am. We went to the Museo San Francisco Cathedral. We went on a tour with a guide through it. We went to the basement and into the Catacombs. After the Cathedral we ate lunch at Don Mamino’s. It is my favorite so far. Also, at the Cathedral there were a bunch of school children on a field trip. They were very excited to see Americans. They were saying “How are you?” and “I love you!” over and over again. It was funny.

After eating we went to Gamara District to pass out tracts. It amazed me that the people came up to us and asked for them and then actually sat down or stopped to read them. We split up in groups and went down the same street just different sides.

At the university we did a skit. After the skit we split up into groups. I was in a group with Clint. We had three advanced students, two girls and a guy. They spoke good English. After about 45 minutes two of the language professors came and sat with us. They wanted to talk about insurance and policies. Before they came and sat with us we had some good conversations with the students. She lived in Gulf Shores for 3 months and worked at Arby’s and the Grand Hotel. The guy in our group has been to Dallas, Texas. That is where his dad lives.

We went back to the missionaries’ home and ate spaghetti. It was Pam’s 22nd birthday so we had her a little party with cake and balloons.

Meet Lucy & Lilly


I love Fridays when the fans start coming in! No I don’t like the added traffic and time it takes to get places but besides that I just love it! Crazy decorated vehicles and RVs everywhere.

For lunch today I had Walton’s. Don’t judge. I never said I only ate healthy. I try but I can’t resist some old favorites. I used to work at Willy T’s which turned into Walton’s in Tuscaloosa. The owners are great. I worked at one other restaurant while I was in high school and Walton’s was by far the cleanest and freshest food place. No they are not paying me to say this. This is how I actually feel. Visit one of the two locations if you are in town and see what I mean.

I ordered the grilled stingers plate hot with no coleslaw add celery. It was good as always. They also have some really good salads that are made fresh. I would know I used to be the vegetable prep girl. I loved cutting up fresh produce all day. What I don’t miss is smelling like chicken and cutting my fingers off.

So at my parents house we have a lot of animals. 4 cats + 1 stray kitten that we still need to find a home for and 2 dogs. I lay claim to 2 of them.

Lilly which I have had since I was 8. I love her dearly! I will be 24 this month so she is getting on up there.

So I have a lot more pictures of Lilly put cats tend to look the same in all pictures or at least mine do so I won’t bore you with a million of them.

Lucy is my acquired dog. An old roommate found her in a parking lot and brought her home and put her in the backyard. I ended up feeding and taking care of her…

So 3 years later she has moved in with my parents and become an inside dog. She has taken up with my mom so I don’t know if I can even call her mine anymore. I still pay child support so I guess so.

She is spoiled rotten. I am serious! She has to be tucked in at night and told to go to sleep. She will stay like this all night until you tell her it is time to wake up. She also never barks. She cries when anyone leaves to go somewhere. You can hear her down the road. It sounds like she is screaming. I kid you not! I can’t make this stuff up! If I figure out how to post videos I will. It is absolutely crazy.

She looks like a black lab with chopped off legs. Oh and by the way she has gained a LOT of weight since moving in with grandma. Note to self don’t let my future children stay with my parents for too long or they will gain 40 pounds!

Lucy and Lilly are the bestest of friends! Which is funny because none of the other animals like them. So I guess they have to stick together.
