Hokkaido | Tuscaloosa, AL


Hokkaido is one of my favorite Japanese restaurants. We frequently order lunch there at the office. I love their ginger salad which I did not get a picture of since I finished it before thinking of taking a photo. I love the grilled vegetables but sometimes I order the teriyaki chicken too. If you are in Tuscaloosa looking for a good Japanese place Hokkaido will not disappoint.

Full Moon BBQ | Tuscaloosa, AL


I am not a huge fan of barbecue but every once in a while I will be in the mood for it. Mom and I went to Full Moon several months ago. I ordered the BBQ chicken sandwich. It was really good. I loved the chow chow and wished they had given me more than just a spoonful. If I am wanting BBQ again I would definitely go back to Full Moon.

Mirko Pasta | Mobile, AL






This past weekend I went to Mobile. While I was there Trey took me to Mirko Pasta, an Italian place he had been to with his work. I am not an Italian fan but he promised me I would like it. They bring you fresh hot rolls with a bean and olive oil dip. It was amazing. He told me I could pick what we both had so I could try what I wanted since I wasn't really excited about eating at an Italian place. I chose the Lasagna Verde - spinach sheets layered with meat sauce and Mozzarella and Panino de Pollo - chicken salad with lettuce and tomato served with fries and tomato soup. After I tried everything I decided to eat the chicken salad panini. It was delicious. The tomato soup was really good as well. In the end Trey was right, I did like this place and would definitely go back. I should be more trusting when it comes to Trey and food. He has gotten pretty good over the years knowing what I will like.

Fish Tacos with Creamy Cilantro Onions


Fish Tacos with Creamy Cilantro Onions

Cook Time: 10 minutes

Ingredients (serves 2)
  • 1/4 cup fat free sour cream
  • 2 tablespoons chopped cilantro
  • 2 tablespoons lime juice
  • 1 jalapeño pepper, seeded and chopped
  • 1 cup thinly sliced white onion
  • 1 1/2 teaspoons brown sugar
  • 1 teaspoon dried oregano
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground red pepper
  • 4 tilapia fillets
  • 1 tablespoon olive oil
  • 8 (6-inch) tortillas
  • shredded cabbage
Instructions
Combine first sour cream, cilantro, lime juice and jalapeño in a food processor; process until smooth and mixed. Combine jalapeño sauce and onion in a small bowl. Set aside.
Combine brown sugar, oregano, garlic, salt, cumin and red pepper; sprinkle evenly over fish.
Heat oil on medium-high heat in a large skillet.
Add fish to pan; cook until done flipping after 3 minutes. (fish will be white and flaky when cooked thoroughly)
Warm tortillas according to package directions. Divide fish, onion mixture and cabbage evenly among tortillas.

Bacon Jalapeño Deviled Eggs


Trey loves deviled eggs so when I saw on Pinterest deviled eggs with bacon and jalapeños I knew I had to make them for him. Plus I was already making jalapeño cheddar chicken burgers so I had plenty of jalapeños on hand. I just made deviled eggs like I normally do and added the bacon crumbles and jalapeños. Sadly, I did not have any paprika to make them more festive looking. 

Bacon Jalapeño Deviled Eggs

Prep Time: 5 minutes
Cook Time: 15 minutes
Ingredients (12 deviled eggs)
  • 6 eggs
  • 1/4 cup mayo
  • 1/2 tbs mustard
  • 1tbs jalapeños, seeded and chopped
  • 1tbs bacon, cooked and crumbled
Instructions
Bring boiler with eggs in it to a boil. Boil for 15 minutes.
Remove eggs from stovetop and drain water. Cover eggs with cold water and ice.
Once eggs are cool, peel them and slice them in half.
Mix egg yolk, mayo and mustard. Fold in jalapeños and bacon.
Put mixture into a ziplock bag. Cut one corner of bag and squeeze mixture into egg whites.

Floating Down Styx River


Last month I got to experience floating down a river for the first time. We went to Styx River in Robertsdale. It was storming and raining on the drive down and I was dreading it the whole way. We stopped at the gas station across the street to wait on everyone in our group to get there. Trey and I went in and got Subway sandwiches to-go for the 6 hour float down the river. While waiting on everyone to get there it started thundering and lightening in the distance. At this point I did not want to float anymore and was willing to sit in the car for 6 hours until everyone else was done. 

For those of you who have never met me, I am not a risk taker. In one of my econ classes I was the only one who would not risk losing a small amount of money in order to gain a large amount. My way of thinking is if I am not guaranteed to walk away with anything I will just keep what I already have. 

But back to Styx River. I just knew we were going to get struck by lightening but since I was the only one with this fear I gave in. There were tons of people there with no concerns whatsoever. In the end, I am glad I went. It was a lot of fun and the rain cooled you off plus no one got sunburned. Someone did end up losing their car keys in the river though... 

Can't wait to float again!

Hannah's Bachelorette Weekend


This weekend was one of my friend/sorority sister/old roommate's bachelorette weekend. Everyone came to Tuscaloosa. On Friday, we started out at Perry's for a lingerie shower and then headed downtown. On Saturday we went to dinner at one of my favorites, Chuck's, and then went dancing. It was great to get to hang out with such amazing girls! I miss them all so much!


So this is the new sorority pose? I still have a crick in my neck from this picture...


This weekend went by too fast. Now, only a few more weeks until Hannah's wedding! Ahhh!!

Cream & Sugar Cafe | Mobile, AL







Cream & Sugar is the cutest. Trey and I both ordered the breakfast burrito he had a side of garlic cheese grits and I had the hashbrowns. The hashbrowns were my favorite part. They were super cheesy with bacon pieces mixed in. Their cappuccino is good too. We got some cake balls to go.

The Blind Mule | Mobile, AL








Let me just start with if you live in Mobile and have not been to The Blind Mule yet then you must go right now. The "Looooooooaded" Nachos - fresh tortilla chips topped with Mule chili, cheese, fresh salsa, jalapeños, green onions and sour cream are the best nachos I have ever had. Like the menu says, everything tasted so fresh. Trey ordered the Buffalo Chicken Wrap and I had the Shrimp & Grits - sautéed shrimp, Conecuh sausage, red onions, green peppers, green onions, herbs and spices over cheese grits. So good! The sauce with the cheese grits was perfect.
