Animal Lover


Yesterday morning this little sweet heart showed up on my back porch. It looks like my parents are going to end up keeping her. My parents have the biggest soft spot for animals. I guess that is where I got it from.

Turkey Bravo

For lunch yesterday I had a half of a Bacon Turkey Bravo from Panera minus the bacon and gouda add cheddar. I ate the other half for dinner.

Bike Ride

I went with a friend Stephen on the above bike ride. It was so much fun. My favorite part though was playing with this little fellow named Polo. He has the softest fur ever. I wanted to take him home with me.

Today after work I spent the evening visiting a wonderful man. Nana and Pop are like grandparents to me. They are one of my friend’s grandparents.

First day of 10k Training


For lunch I had the Queso Blanco Taco Salad from Manna. My boss got the Chocolate Tofu pie for dessert and let me try it. Let me just tell you I will be getting a dessert next time! It was delicious.

I tried this MiO liquid today. I have had the fruit punch flavor and peach tea so far. The peach tea is the best so far. I like the liquid better than the powders. The liquid doesn’t thicken the water like the powder does.

I had my first cup of hot coffee today since last fall! It was so good. I loved the weather today. It was in the 60s!

I am starting to train for a 10k! The weather was so great I couldn’t pass up running outside. Today was a 1.5 mile run. Here are my stats.

Day 1

I am in love with the Map My Run iPhone app. I'm not fast yet but I am working on it! I am more concerned about being able to run distance not my speed.

On my way back to the car this was the view. So pretty. Tomorrow is a 30-40 minute bike ride. I can’t wait!

Rainy Lazy Labor Day


I woke up and it was raining. I made a breakfast burrito with eggs, cheese, turkey bacon and salsa.

This was the view out the front door all day long. It literally has not stopped raining all day. We are talking some serious flooding around town. I hope it stops sometime soon!

Game Day Food

For lunch Friday I was craving a vegetarian burrito bowl from Chipotle. Cilantro lime rice, black beans, grilled peppers and onions, lettuce, pico de gallo, cheese, sour cream and guacamole with a side of chips. Totally hit the spot.

RVs rolling in! This is the usual sight in Tuscaloosa on a Thursday or Friday afternoon before a home game.

Trey got into town early then expected so instead of cooking we decided to go out to dinner. We went to Red Lobster. I am usually not big on chain restaurants but I was craving some seafood and we don’t have that many options to work with.

I ordered a mango strawberry daiquiri. It was huge and soooo good! Trey had a bloody mary. It was okay. (He drove straight from work hence the scrubs.)

Trey ordered the lobster bruschetta. I ordered the pick two had chose steamed snow crab legs and garlic shrimp scampi. I had one of Trey’s bruschetta and he helped me tackle the shrimp.
For the game on Saturday Trey and I made two dishes.

First we made an Angel Food Cake Dessert. My boss’s wife made this when we served dinner to the police volunteers who came in town to help with the tornado relief. It was a big hit. It is so good and like nothing I have ever had.

Angel Food Cake Dessert

Ingredients:
  • 1 Angel Food Cake
  • 8 oz pkg fat free cream cheese
  • 1 can of fat free Eagle Brand Milk
  • 1/4 cup lemon juice
  • large container of strawberries, chopped (you can use any fruit you want)
  • large container of lite cool whip
Instructions:
  1. Mix cream cheese, Eagle Brand milk, lemon juice, 3/4 of your strawberries and half of the cool whip.
  2. Tear 1/4 of your Angel Food cake apart and mix it in with the mixture.
  3. Tear the rest of the Angel Food cake up and put a layer of the cake in a dish.
  4. Pour some of the mixture over the layer of cake.
  5. Repeat layering until you run out of both cake and mixture.
  6. Top with the remainder of cool whip.
  7. Sprinkle the top with the left over strawberries.
  8. Let sit in fridge for at least 1 hour. The longer it sits the better.

Next we made a Jalapeño Popper Dip.

Adapted from Annie’s Eats recipe.

Ingredients:
  • 2 - 8 oz pkgs fat free cream cheese
  • 1 – single serving size of nonfat Greek yogurt (can’t remember how many ounces)
  • 1 – 4 oz can chopped green chiles, drained
  • 1 – 4 oz can chopped jalapeño peppers, drained
  • 1/2 cup reduced fat shredded Mexican blend cheese
  • 1/2 cup 2% mozzarella cheese
  • 1 cup Panko bread crumbs
  • 1/2 cup grated parmesan cheese
  • cooking spray
Instructions:
  1. Preheat oven to 375 degrees.
  2. In a medium casserole dish, mix cream cheese, Greek yogurt, green chiles, jalapeños, and both shredded cheeses. Mix until creamy and well mixed.
  3. Spread evenly over the dish.
  4. In a small bowl, mix Panko and parmesan.
  5. Sprinkle over the cream cheese mixture.
  6. Spray top with cooking spray.
  7. Bake for 25 – 30 minutes. The top should be golden brown.
  8. Serve with tortilla chips.

There is just something about football season! I can’t put words to it but if you are from Tuscaloosa or have visited Tuscaloosa on a game day you know what I am talking about! I have been to several other cities for games and its just not the same.

On a side note I have great respect for the Kent State football players! They came in town for a few days to help with the tornado recovery efforts by assisting in the rebuilding of houses. Thanks guys! I certainly hope all of the Bama fans clap and cheer for Kent State when they walk on the field! No booing!!! Let’s show some class!

Why blog?

Today is the day before the first football game of the season!! It is pretty exciting. Driving around town you see RVs set up and people wearing Alabama Paraphernalia. I just love it. Growing up in a college town I don't know any other way of life.

Side Note: I updated my About Me page. I feel like this will be a continuously evolving page as I am continuously changing.

Tonight a very special someone gets in town! I can't wait to see him! I have a wonderful dinner planned out. At least I hope it turns our wonderful... We shall see!


How did I learn about health and fitness (life) blogging?

I stumbled across an article in Women's Health Magazine, March 2011 edition titled "What We're Reading This Week" The first one on the list was "Kale and Sweet Potato Frittata" via Peanut Butter Fingers. Peanut Butter Fingers, what was that? (I love peanut butter and this struck my curiosity) I immediately grabbed my laptop and went directly to what I would soon find out to be a health blog. I had never heard of or seen one before. I was immediately hooked. I then looked at PB Fingers' blog roll and discovered many more blogs that have become daily must reads. You can find these on my favorites page.

So I wait…

At work today me and Angela got presents! A court reporter stopped by and gave both of us a sweet little gift! She also brought us Chick-fil-a breakfast a few weeks ago when we had a deposition at our office. She is super sweet and knows to get in good with the paralegals. Haha I am not saying I am easily bribed or anything…

For lunch I had Zoe’s chicken roll-ups with a side of potato salad. I love their potato salad. It does not have any mayo in it. I tried making it a while back and it turned out good! I will have to post the recipe.

For a pick me up after work I ordered a Black and White Mocha nonfat milk and no whip. I found out today this is also called a Marble Mocha and a Michael Jackson.

I saw these at counter and couldn’t pass it up. Three of my favorite things! Cashews, pomegranate and vanilla!

I am in the process of finding an apartment. I have chosen where I want to move now I have to wait till someone moves out! The office manager said there is a possibility someone is moving out in October but for sure someone is moving out in December. So I wait….
