AΔX Alumnae Weekend | Fall 2013

October 4-6, 2013 was Alumnae Weekend for my sorority. It was also Homecoming for UA. It was a lot of fun getting to meet some of the girls. Anna, Perry and I went to the game but did not stay long since we were getting scorched in the sun. It was a fun weekend and it brought back many memories of the "good old days".

Thanksgiving: Part 2

Since I had Thanksgiving with my family on Saturday, I slept in on Thanksgiving day. I took my time packing and getting ready to head to Mobile. 


When driving to Mobile, if I ever have to go to the bathroom I stop at McDonalds in Thomasville. It is the halfway point between Tuscaloosa and Mobile and surprisingly it is always the cleanest bathroom in between. I was hungry and knew I wouldn't be eating dinner for another 5 or 6 hours so I decided to get a Happy Meal. I was pretty excited to see they now automatically come with apples and fries. The fry box is tee-tiny! I think it is cute and just the right amount although my stomach begs to differ:) 


Thanksgiving dinner at the Crockett's was delicious! Mrs. Crockett made an asparagus casserole that tasted amazing. I have never had asparagus casserole and was unsure at first but it was good!

I miss this cat when I am not in Mobile. He is so sweet and cuddly.

I was glad I had time to just relax. When I am at home there always seems to be something that needs to be done. 


On Saturday, Trey and I went to one of his friend's house to watch the game (Bama vs. Auburn). His friend made a crab shrimp sausage cheese dip and burgers. The burgers were marinated in a honey and bbq sauce concoction that was like nothing I have ever tasted. I only got a bite because I usually don't care for burgers if there are other foods to be had but Trey was oohing and awing over them so I snagged a taste.  I see these burgers on my grill in the future. Don't worry I will share the recipe!


We played pool at The Garage. This has got to be the most disgusting pool table ever.



On Saturday night, we went to hear a band at Top of the Bay with some (newly engaged!!) friends that were in town. After several tries Trey and I finally got a good picture.

UA vs. WKU

This past Saturday my parents and I went to the Alabama vs. Western Kentucky game. We were given first row Field Suite tickets. They were amazing. All of the pictures of the field above were taken with my 50mm lens. We were literally on the field. Besides the awesome seats there was an air-conditioned room with TVs and lots of food and drinks. There were Stadium Dogs, shrimp and grits, barbeque, hamburgers, chicken sandwiches, nacho/taco salad bar, cooler of ice cream treats and dessert bar. I never knew what I missing sitting in the student section all of those years…
 
Oh and we won, 35-0!

What I Ate Wednesday #4



Here is a look at some of my eats this past week.

To be completely honest I wasn't even going to watch the Super Bowl... I had no clue what time it was going to start or even who was playing. My friend/old roommate/now neighbor Leigh (yes we have known each other for a really long time:)) came over to borrow my vacuum cleaner on Sunday and it was then we decided we should watch the game together. I then invited another friend that just moved to town to come over. I decided I better start cooking and already had a list of things I wanted to make. I narrowed it down since there would only be three of us.


















-  Mini Corn Dog Muffins inspired by Iowa Girl Eats : I took the super easy way out and used Jiffy Corn Muffin mix and followed the box instructions and adding the hot dog in the middle.
- Baked Parmesan Garlic Fries also from Iowa Girl Eats: I pretty much followed the recipe except I didn't measure anything and I used baby red potatoes. I was in a hurry and just threw everything in the bowl.
- Trey's Brie Pastry: This is a favorite of mine but I refuse to make it unless I have company because I will eat the whole thing. So to save my hips I only make it for special occassions.

I had one of the heart cookies from my FBS2012 swag bag. It was so good and I love that The Piece de Resistance only use real ingredients you can actually read. You must go look at her cookies they are gorgeous! I had some egg drop soup that wasn't all that great... A salad from Subway that was even less great. I really like Subway's sandwiches but I would suggest not getting a salad. It was too plain but maybe that was my fault for not adding a lot of toppings I don't know.

Yesterday for lunch I had a vegetarian bowl from Chipotle with brown rice, black beans, fajita peppers and onions, lettuce, pico, cheese, sour cream and guac. Mmmm tasty but as always I attempted to eat the whole bowl and was way too full.



Now I am sipping on my last Click Vanilla Latte. I should not have waited until I ran out to reorder. Now I may go through withdrawals... It's okay I will survive I still have Starbucks!

I hope everyone's week is going good so far! We are half way to the weekend!

Alabama vs. LSU


Today is the day we have all been waiting for! The Alabama (#2) vs. LSU (#1) game. Hopefully after tonight Bama will be #1. Of course in all Bama fans eyes we are already #1 but we need to make it official tonight.

Alabama vs. Tennessee

Today was a Game Day! I decided to go to the tailgate since it was Alumnae Weekend. We had a ton of good food and this cute candy bar. They had caramel popcorn trial mix bags and a lot of different “crimson” candies. They had one of my favorites! Boston Baked Beans.

I did not have a ticket to the game so the plan was to leave early and get some errands done before going home to watch the game. If you live in a college town then you know the best time to run errands is on a game day. The town is dead and it takes no time at all to get things done.

Well I had parked in a hidden parking lot for free. I was super happy I didn’t have to pay $30 or more to park. When I walked back to my car one Jeep had blocked the entire lot in! I was so mad! I guess that is what I get for trying to park for free. Thanks to all of my awesome friends who came to pick me up and then take me back!

Btw…. Bama won! It was tied until after half-time but we pulled it out. Roll Tide!!

Teriyaki Chicken and Ranch Potatoes

My point and shoot camera has quit on me… I have been looking at a couple of DSLR cameras a lot lately. I think I have figured out the one I want. If anyone has any suggestions on this type of camera please share! This will be my first DSLR so I need something user friendly. I have been using my iPhone camera for a few weeks now…

This morning Trey and I went to Walmart again as if I didn’t get everything I needed last night. We bought stuff to cook for dinner. He bought steak and I bought chicken.

Ranch Potatoes
Adapted from Leigh (my friend and new neighbor)

Makes enough for 4

Ingredients:
  • 1 1/2lbs baby red potatoes
  • salt
  • 4tbs fat free sour cream or Greek yogurt
  • 2tbs light mayo
  • 8oz ranch dry seasoning (1/2 a packet)
  • parsley

Instructions:
  1. Dice potatoes and put in a pot. Sprinkle in some salt. Cover potatoes with water and boil till potatoes are soft and east to cut.
  2. Preheat oven to 350 degrees.
  3. Drain potatoes and put in a casserole or baking dish.
  4. Add sour cream, mayo, ranch seasoning to potatoes and lightly stir until mixed well. 
  5. Cover dish with foil.
  6. Bake for 15-20 minutes.
  7. Sprinkle parsley for a little color.

Teriyaki Chicken with Onions

Makes enough for 4

Ingredients:
  • 1 bottle of Kikkoman Teriyaki Baste and Glaze
  • 12 chicken tenderloins
  • 1 sweet yellow onion
  • 1/4 cup light brown sugar

Instructions:
  1. Place all ingredients in a bowl and mix well.
  2. Make sure grill is hot and put chicken in. I am not certain on the cooking time I just cooked until the inside of the chicken was cooked thoroughly.
  3. After chicken is cooked place onions on grill and brown.

For other sides I cooked a can of low sodium green beans and made cheese crescent rolls (the easy way). I took a roll of reduced fat crescent roll dough and added colby jack cheese in the middle.
