Roll Tide

You know you live in a college town when traffic quadruples around this time of year or when you go to Target and the shelves are empty. I mean completely bare, nothing, nada. It is a little irritating at times but then when football season starts I forget my irritations and embrace the extra 33,602 students in town, Roll Tide! For those of you not from Alabama or not a Crimson Tide fan, Roll Tide is used to convey many different things. To celebrate: Bama just made a touchdown, Roll Tide! To release anger: I just stumped my toe, Roll Tide! To greet a passerby: Roll Tide!

All that being said, while I was in college at UA I would usually have to go to multiple bookstores to find my textbook or order it online. I mean with 33,602 other students going to the same stores for the same classes the bookstores are bound to run out or only have new books which I refused to buy since they were so expensive.

All of you college students out there, you have another option. I wish I knew about this when I was in college. CampusBookRentals.com gives you the option to rent your textbooks.

A few perks to renting your textbooks from CampusBookRentals include:
- save 40-90% off of bookstore prices
- free shipping both ways
- you can highlight in the textbooks
- flexible renting periods
- AND Campus Book Rentals donates to Operation Smile with each textbook rented

So not only are you spending less on textbooks you are helping donate to a great cause.

After your class is over and you do not need the book anymore they have come up with a great option to get more of your money back than you would just selling it back to a bookstore. Check out RentBack.com. RentBack is a new program that allows students to rent the textbooks they own to other students. Here is a video from the RentBack website that explains how this works.

Have you ever rented textbooks before? If so, what did you like or dislike about it?

This post is sponsored by CampusBookRentals. But don't worry! All thoughts and opinions are my own.

Instructions:
  1. In a small bowl, mix mayo and curry together. I used about 2 tbs but you can choose how much to taste.
  2. In a medium bowl, mix turkey, feta, about 1 tbs parlsey, chopped onion, garlic powder. After completely mixed add one heaping tbs of curry mayo. Mix well.
  3. Make out into large patties. They will shrink a lot after cooked.
  4. Broil on 450 degrees until turned a brownish color about 8-10 mins. Flip over let cook until done about 5-6 mins.
  5. Use some of the remaining curry mayo on the bun.

Game Day Food

chipotle

For lunch Friday I was craving a vegetarian burrito bowl from Chipotle. Cilantro lime rice, black beans, grilled peppers and onions, lettuce, pico de gallo, cheese, sour cream and guacamole with a side of chips. Totally hit the spot.

rvs

RVs rolling in! This is the usual sight in Tuscaloosa on a Thursday or Friday afternoon before a home game.

Trey got into town early then expected so instead of cooking we decided to go out to dinner. We went to Red Lobster. I am usually not big on chain restaurants but I was craving some seafood and we don’t have that many options to work with.

mango strawberry daquiri

I ordered a mango strawberry daiquiri. It was huge and soooo good! Trey had a bloody mary. It was okay. (He drove straight from work hence the scrubs.)

Red Lobster

Trey ordered the lobster bruschetta. I ordered the pick two had chose steamed snow crab legs and garlic shrimp scampi. I had one of Trey’s bruschetta and he helped me tackle the shrimp.
For the game on Saturday Trey and I made two dishes.

First we made an Angel Food Cake Dessert. My boss’s wife made this when we served dinner to the police volunteers who came in town to help with the tornado relief. It was a big hit. It is so good and like nothing I have ever had.

Angel Food Cake Dessert

Ingredients:
  • 1 Angel Food Cake
  • 8 oz pkg fat free cream cheese
  • 1 can of fat free Eagle Brand Milk
  • 1/4 cup lemon juice
  • large container of strawberries, chopped (you can use any fruit you want)
  • large container of lite cool whip
Instructions:
  1. Mix cream cheese, Eagle Brand milk, lemon juice, 3/4 of your strawberries and half of the cool whip.
  2. Tear 1/4 of your Angel Food cake apart and mix it in with the mixture.
  3. Tear the rest of the Angel Food cake up and put a layer of the cake in a dish.
  4. Pour some of the mixture over the layer of cake.
  5. Repeat layering until you run out of both cake and mixture.
  6. Top with the remainder of cool whip.
  7. Sprinkle the top with the left over strawberries.
  8. Let sit in fridge for at least 1 hour. The longer it sits the better.

Graduation

I graduated from The University of Alabama yesterday!
Graduation started at 2 o'clock. I had to be there at 12:30 and so to insure that I got a decent park I arrived at 12:00. After the graduation was over we went to my aunt's house. We had lots of food! I will post some of the recipes soon!

After partying it up at my aunt's some of us went out to Top Shelf in downtown Tuscaloosa to do some more celebrating and hear our friend John Hayes play.

I have a wonderful family and great friends! Thank you all for encouraging me over the years!
