We had so much going on June 15th. I have a very large family so parties sometimes get planned on the same day. Mom and I went to my cousin, Jordan's birthday pool party and then headed to my other cousin, Meghan's baby shower. It was a fun packed day. Mom made both of the cakes.

Thanksgiving: Part 1
I got lucky this year and got to attend not one, but two Thanksgiving dinners. The first one was last Saturday the 17th. We had Thanksgiving at my Aunt's. My cousins were in town so we went ahead and celebrated early.
Mom made these mini brownie cupcakes with peanut butter frosting.
I tried out a new creamy broccoli casserole.
I also made one of my favorites, squash casserole. I am pretty sure I will never get tired of this cheesy goodness.
After dinner, it was time to decorate the tree.
Aunt Julie is never boring, that is for sure. We always have a good time at her house.

Last Saturday was my Mom's birthday. We got up early and drove to Birmingham. We went to The Shops at Grand River then to The Summit. We had lunch at California Pizza Kitchen. It was both of our first time to ever eat there. For appetizers we ordered Crispy Mac 'N' Cheese - mac 'n' cheese lightly fried with panko, served on creamy cheese sauce and Mediterranean Focaccia - herb cheese focaccia baked and served with Mediterranean olive oil and parmesan. We ordered the Original BBQ Chicken pizza - BBQ sauce, smoked gouda, red onions and cilantro to share. Everything was delicious. I got a glimpse of their salads at the table next to ours, they were huge and looked amazing. I hope to go back and try out some of their other dishes.
After walking around the Summit a little bit we headed back to Tuscaloosa to get mani/pedis. I got a gel manicure for the first time and I love it so far! I had no idea what I was missing out on. It was my Mom's first time to have a professional pedicure. She loved it. I think we will have to make it a common outing for us from now on. After getting our nails done we went to my Aunt's for Thanksgiving dinner. I will save that for another post! I hope everyone is having a wonderful Monday!

Things are Looking Up
After a challenging and rough week, things are beginning to look up. Yesterday, the doctor removed the drainage tubes from my Dad's head and this morning he was moved out of TSICU and into a regular hospital room. If all things go as planned he will be moved on Monday to Northport DCH Rehab for 2 weeks. He has been recovering a lot better and faster than I would have ever thought someone could after having brain surgery. Less than three hours after the surgery on Monday he was awake and talking to us.
We celebrated his birthday on Wednesday complete with cupcakes and balloons.

Happy Birthday Daddy! Get Well Soon!
Today we will be celebrating my Dad's birthday in the hospital. Dad is doing great and will hopefully be moved out of TSICU soon and into a regular room. The doctor clamped the two drains that are in his head so that he is able to get out of bed a little today. We have been so blessed! Please pray that he will continue to do well and will be home soon!

Granny’s Coleslaw
Granny's Coleslaw

Prep Time: 10 minutes
Keywords: refrigerate side cabbage

Ingredients (serves 8-10)
- 16 oz coleslaw
- 1/2 large sweet onion
- 3/4 cup light mayo
- salt & pepper to taste
Instructions
Using a food processor, chop up the cabbage mix.
Place chopped cabbage in a bowl.
Using a food processor, chop the onion. Make sure not to process into mush!
Put onion into the bowl with the cabbage.
Stir in the mayo. Mix well.
Add salt and pepper to taste.
Refridgerate until ready to serve.
